Stroopwafels originated in The Netherlands as a "poor people's biscuit," and poor people never had it so good. Two thin brown-sugar waffles are bonded with a layer of gooey cinnamon caramel. These are made by Lancaster Stroopie Co. in Lancaster, Pennsylvania, a small business that employees refugee women. Leave it to mountain people to be both compassionate and clever. They've also refashioned the traditional stroopwafel, which is round, into the shape of an adorable Christmas tree, complete with white chocolate "snow" and sprinkles. Each package contains one stroopwafel.
